Ingredients

  • (1 lb.) Ground beef
  • (1/2) Medium onion chopped
  • (1 1/2 Tsp.) Salt
  • (2 Tbsp.) Butter
  • (6 (2 1/4 lbs)) Medium potatoes shredded
  • (3) Eggs-beaten
  • (2 Cups) Cheddar cheese- shredded or Velveeta sliced

Directions

  1. In a 12-inch skillet over medium heat, brown beef with onions, greens peppers, and 1/2 tsp salt and pepper.  
  2. Remove meat mixture from skillet and drain fat. 
  3. Reduce heat to low.
  4. Melt butter.
  5. Spread potatoes over butter and sprinkle with remaining salt.
  6. Combine eggs and milk.
  7. Pour mixture over all.
  8. Cook covered until potatoes are tender.
  9. Stir up once and awhile.
  10. Top with cheese. 
  11. Cover and heat until cheese is melted.
