Apricot Glazed Pork

Ingredients
- (1 Tbsp) Chili Oil or Vegetable Oil
- (1 lb) Pork Tenderloin- cut into 1/2" slices
- (1 Package (16 oz)) Frozen Broccoli, Cauliflower and Carrots
- (3 Tbsp) Apricot Preserves
- (1 Tbsp) Oyster Sauce or Hoisin Sauce
- Cooked Rice (Hot) or Noodles (if desired)
Directions
- Heat wok or 12 inch skillet over high heat. Add oil. Rotate wok to coat side.
- Add pork and stir fry 4 to 5 minutes or until no longer pink in the center. Add vegetables and stir fry for 2 minutes. Stir in the preserves and oyster sauce. Cook and stir about 30 seconds or until hot. Serve with rice.
