Apricot Glazed Pork

Ingredients

  • (1 Tbsp) Chili Oil or Vegetable Oil
  • (1 lb) Pork Tenderloin- cut into 1/2" slices
  • (1 Package (16 oz)) Frozen Broccoli, Cauliflower and Carrots
  • (3 Tbsp) Apricot Preserves
  • (1 Tbsp) Oyster Sauce or Hoisin Sauce
  • Cooked Rice (Hot) or Noodles (if desired)

Directions

  1. Heat wok or 12 inch skillet over high heat.  Add oil.  Rotate wok to coat side.
  2. Add pork and stir fry 4 to 5 minutes or until no longer pink in the center.  Add vegetables and stir fry for 2 minutes.  Stir in the preserves and oyster sauce.  Cook and stir about 30 seconds or until hot.  Serve with rice.
