Beef Stroganov

Ingredients

  • (2 Lbs.) Beef tips or beef tenderloin
  • (2 Tbsp.) Olive oil
  • (1/4 Cup) Chicken or beef stock
  • (2 Tbsp.) White wine
  • (1 Small) Onion- peeled and quartered
  • (1/2 Cup) Sour cream
  • Salt and pepper
  • (1) Bay leaf

Directions

  1. Cut the meat into thin strips against the grain.
  2. Heat meat in a large skillet until hot.
  3. Add olive oil to the skillet .
  4. Add meat strips to the olive oil and brown both sides of the meat.
  5. Transfer browned meat to a pot.
  6. Add beef or chicken broth stock along with wine to the pot.
  7. Mix the remaining juices from the meat .
  8. Add the liquid to the pot.
  9. Add onion pieces to the pot and bury them in the meat.
  10. Add the bay leaves and make sure that it is immersed in the liquid.
  11. Simmer on low heat for 45 minutes . Make sure that there is enough liquid in the pot.
  12. When meat is tender, add sour cream, mix, and simmer for another 3 minutes.
  13. Add salt and pepper to taste.
