Beef Stroganov

Ingredients
- (2 Lbs.) Beef tips or beef tenderloin
- (2 Tbsp.) Olive oil
- (1/4 Cup) Chicken or beef stock
- (2 Tbsp.) White wine
- (1 Small) Onion- peeled and quartered
- (1/2 Cup) Sour cream
- Salt and pepper
- (1) Bay leaf
Directions
- Cut the meat into thin strips against the grain.
- Heat meat in a large skillet until hot.
- Add olive oil to the skillet .
- Add meat strips to the olive oil and brown both sides of the meat.
- Transfer browned meat to a pot.
- Add beef or chicken broth stock along with wine to the pot.
- Mix the remaining juices from the meat .
- Add the liquid to the pot.
- Add onion pieces to the pot and bury them in the meat.
- Add the bay leaves and make sure that it is immersed in the liquid.
- Simmer on low heat for 45 minutes . Make sure that there is enough liquid in the pot.
- When meat is tender, add sour cream, mix, and simmer for another 3 minutes.
- Add salt and pepper to taste.
