Pork spare ribs are the thin, flat ribs found on top of the belly. They consist of bone surrounded by a thin layer of flavorful meat and connective tissue. Pasture raised pork has a good amount of fat that keeps the ribs from drying out. 

The meat on spare ribs is tough unless it’s cooked low and slow on the grill or in the oven. Then it becomes truly fall-off-the bone tender. 

We recommend that you season the ribs overnight with your favorite spice rub. Then, wrap the rack in foil and cook it over low heat on the grill, in the oven, or in a smoker. To finish, sear the cooked ribs over high heat on the grill or under the broiler to get the perfect combination of tender meat and crisp edges.
